INGREDIENTS
450g (1lb) lean minced beef
2 cloves garlic, crushed
1 onion, finely chopped
1 carrot, finely chopped
1 courgette, finely chopped
450ml (¾pt) passata
150ml (¼pt) red wine
227g can chopped tomatoes
30ml (2tbsp) tomato purée
METHOD
1. In a large non-stick saucepan, dry fry
the mince, garlic and onion until browned.
2. Add the carrot and courgette and cook for 2-3 minutes.
3. Add the remaining ingredients, bring to the boil and
simmer for approximately 25 minutes until the carrot and
courgette are cooked.
Serve the bolognese with fresh spaghetti and a side salad.
