Bacon Brunch

Serves: 2
Cooking Time: Approximately 12 minutes

INGREDIENTS

2 pork sausages
4 lean back bacon rashers
2 frozen potato waffles
1 medium tomato, sliced

METHOD

1. Place the sausages and potato waffles under a preheated grill and cook for 10-12 minutes, turning the sausages frequently and the potato waffles half way, until thoroughly cooked.
2. 2-4 minutes before the end of cooking time, add the bacon and tomato to the grill pan and cook for 1-2 minutes each side.


Serve the bacon brunch with sauce of your choice.

Tip: Potato waffles were used here but bagels, bread, buns or croissants would be just as tasty.
