The Ox Cheek muscle as the name suggests comes from the cheek of the cattle, as cows graze for a large proportion of their lives the muscle is very strong and heavily worked so contains lots of connective tissues and gristle.

This is a product that is recommended to be braised for a long period of time. During cooking the connective tissue and gristle breaks down into the meat and creates a tender and delicious product that has a fantastic depth of flavour.

Perfect for use in stews and casseroles.
