These 4oz Beef medallions are cut from a trimmed whole beef fillet.
By nature this cut is extremely succulent and tender because it is the least worked muscle on the animal.
This causes the muscle to be looser in grain and guarantees a higher eating quality than other steak cuts.
Recommended to be served rare to medium.
