This cut of pork is the equivalent of the fillet of beef within the Pig.
The tenderloin is one of the leanest pork cuts available and therefore is high in protein and very low in fat.
A family favourite marinated and roasted as a whole joint. It can also be sliced into strips for stir-fry dishes, or easily portioned into pork medallion steaks.
As there is little to no intermuscular fat be careful not to overcook, as this can cause the meat to dry out.
